Hello my friends! This chicken caprese recipe is super easy and it passed the husband test:) I'm afraid I did not take any pictures, but this has to be the easiest recipe I have ever posted here on PCM. Here's the link to the original recipe on Tasty Kitchen.
What you Need:
* ¼ cups Olive Oil, Plus 2 Tablespoons, Divided
* 1 teaspoon Salt
* 4 teaspoons Ground Black Pepper
* 4 whole Skinless, Boneless Chicken Breasts
* 4 whole Roma Tomatoes--sliced
* 1 cup Bocconcini Cheese
* 4 Tablespoons Balsamic Vinegar
* ½ cups Fresh Basil, Cut Into Chiffonade
What to do:
1. In a large resealable bag, drizzle ¼ cup olive oil, salt and pepper over 4 boneless, skinless chicken breasts. Seal bag and mix the bag around to coat the chicken evenly.
2. On the barbecue or in a grill pan over medium heat, grill the chicken until cooked through (about 7 minutes per side).
3. To serve, place a cooked chicken breast(s) on a plate or platter, top each with the tomato slices, bocconcini (or slices of fresh mozzarella), drizzle the balsamic vinegar and the remaining 2 tablespoons olive oil and top with the fresh basil.
We did not use any cheese because CAT doesn't like it, and I think the recipe was just as good without it. The chicken was fabulous! Crispy, crusty, and favorful! This would make a great entertaining meal as well - easy to do and you could just put the ingredients out kind of like a taco bar. Enjoy!

Happy Tuesday my lovely readers! I hope everyone is having a good start to the week and had a fantabulous weekend:) CAT and I had a very productive one, doing a small reno project in the guest bath & painting it. Only 2 bathrooms, the bonus room, & the laundry room left!
Here's my little bit fun and little bit bright project. It will hang in the bathroom soon but I wanted to show it off to y'all:) I covered a canvas in some great fabric that arrived yesterday and added one of my favorite quotes from Alice in Wonderland. Do y'all like it?

Here's what you can have for dinner tonight! This salsa is super yummy over fish and I can imagine it would be delicious with chicken and shrimp as well. Also great for a cook-out because you can prepare the salsa beforehand. Here's the link to Pineapple Mango Salmon on Tasty Kitchen. I used Mahi Mahi instead because I can get it fresh here at the coast.
What you need:
* 5 whole Limes, Divided (juice Only)
* 1 pound Salmon Fillet (any fish would work! or shrimp or chicken)
* 5 Tablespoons Fresh Cilantro, Minced, Divided
* 2 Tablespoons Parsley, Minced
* 2 whole Mangoes
* ½ whole Pineapple
* 1 whole Sweet Red Bell Pepper
* 2 whole Plum Tomatoes
* 1 whole Jalapeno
* 4 whole Green Onions
* 2 Tablespoons Olive Oil (I did not use in Olive Oil, the juice from the limes was plenty of liquid and our fish did not stick)
* Kosher Salt And Freshly Ground Black Pepper
How to do it:
Start by squeezing 2 limes over the flesh side of the salmon fillet. Sprinkle with salt and pepper and 2 tablespoons cilantro and parsley. Allow to sit while you prep the salsa and preheat your grill to 500° F.
Peel and dice the mango and pineapple. Chop red pepper, tomatoes, jalapeƱo and green onions. Mix together. Squeeze in juice from remaining three limes. Stir in remaining 3 tablespoons cilantro, finely minced. Salt if desired. Allow to sit in the fridge for the flavors to combine while you grill the salmon.
When the grill is hot, spray fish lightly with olive oil to prevent sticking. Place flesh side down on the grill and cook for 3 minutes. Carefully flip the salmon to the skin side and continue cooking for 5 minutes. Remove from grill. Top with pineapple-mango salsa and serve.
Enjoy! I have enough salsa leftover to try it on some different things this weekend!

Happy Tuesday y'all! I'm back for another edition of the Tucker House Tour! This week, the living room - one of the most used rooms in the house of course. This living room is MUCH bigger than the one we had in Cary and our stuff fits perfectly. The color is Sherwin Williams "Poolside", which is my favorite color of all time. And I've been told that it looks very beach-y, so it fits in perfectly here at the coast! The beadboard was here when we moved in and it helps to keep the rooms very light and open looking. And how lucky did we get that our tv fits in the cubby hole? We had to remove the side cabinets, but it is a perfect fit!

Last weekend I went to Boston for a Bachelorette party and we just had the best time there ever was! A great group of girls, a fun city, a great family, and a great bride.
